ULTRA-TEX® 2 is a high performance cold water swelling (CWS) modified food starch derived from waxy maize. It possesses superior sheen, clarity, and smoothness when compared to traditional pregelatinised starch dispersions. It provides many of the desired characteristics of a specialty cook-up starch without heating.
This product is often used as a thickener in dry mix sauces, gravies, pie fillings, glazes, and pastry fillings.
